Loudon Squares


  • 1 cup sugar
  • 1/2 tsp baking powder
  • 2 1/2 cups flour
  • 2 1/4 sticks butter
  • 3 cups unsweetened coconut or ground almonds
  • 3 egg yolks
  • 4 egg whites, stiff
  • pinch of salt
  • red currant or raspberry jam

Mix flour, butter, salt, 1 cup of sugar, egg yolks, and baking powder into a dough. Roll it out to make a rectangle the size the cookie sheet. Transfer to a greased cookie sheet.

Only half-bake the dough at 350. Let cool 5-10 minutes. Spread red currant or raspberry jam over the cookie.

Mix egg whites with 1 cup sugar and coconut. Spread this mixture on top of the jam and return to the oven to finish baking. Cool slightly and cut into 1" squares using a sharp knife.
