Fennel Cookies

  • 1 cup cranberries or raisins
  • 1 tsp ground fennel seeds
  • 1/2 cup chopped almonds, walnuts, or hazelnuts
  • 1/2 cup dried apricots, chopped
  • 2 1/2 cup sugar
  • 3 eggs
  • 4 tbsp butter, softened
  • zest of 1 lemon

Mix all ingredients and make a dough. Divide into four pieces. Roll each piece into a log 1" thick. Put on a greased cookie sheet.

Bake slowly at 275 until slightly pink. (A high temperature will make it crack on top.) Cut into 1/2" circles.
