Tabouleh

  • 1 1/2 cup tomatoes, peeled and diced (about 3-5 Roma)
  • 1 tbls olive oil
  • 1-1 1/4 cup water
  • 1/2 cup wheet berries, simmer approx 1 hour until soft
  • 1/4 - 1/2 cup green onions
  • 1/4 - 1/2 cup mint leaves roughly chopped
  • 1/4 cup lemon juice
  • 1/4 tsp garlic
  • 4 cups parsley or kale, chopped, loosely packed
  • pinch of salt

In a large salad bowl, toss together the parsley, tomatoes, green onions and mint. Add cooled wheat berries. To make the dressing combine lemon juice, garlic, salt and olive oil. When finished, toss salad.
