Rhubarb Bar Cookies

  • 1 cup flour
  • 1 cup sugar
  • 1 egg, beaten
  • 1 small pkg strawberry Jell-O (3 oz)
  • 1 tbsp milk
  • 1 tsp baking powder
  • 1/2 cup butter, softened
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups rhubarb, peeled and finely diced

Preheat the oven to 350 degrees. Mix the first four ingredients. Cut in 1/2 cup of softened butter until the mixture is crumbly. Beat the egg with the milk and then thoroughly combine with the crumbly mixture. Spread the mixture out in the bottom of a greased 9 x 9 pan. Press it down slightly. Sprinkle the diced rhubarb over the top and sprinkle the Jell-O powder over that.Mix the remaining four ingredients same as the first and scatter the crumb mixture over the top of the pan. Bake for 45 minutes, or until the rhubarb is cooked through and the topping is nice and brown. Cool before cutting and dusting with powdered sugar.
