Cashew Crips

  • 1 1/2 cup butter, melted
  • 1 1/2 cup salted cashews, finely ground
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/8 cup molasses
  • 2 cups sugar
  • 2 eggs, beaten
  • 2 tsp vanilla
  • 3 cups flour

Preheat oven to 350 degrees. Cream the butter, sugar, vanilla, and molasses. Then stir in baking soda, baking powder, and salt. Mix in salted cashews (measure after grinding). Pour in the beaten eggs and stir. Then add the flour and mix until all the ingredients are thoroughly blended.

Let the dough sit for a few minutes before rolling into walnut-sized balls. Arrange them on a greased cookie sheet and flatten them slightly. Bake for 10-12 minutes, or until the edges turn gold brown.
