Orange Snaps

  • 1 1/2 cup butter, melted
  • 1 tsp orange zest
  • 1 tsp salt
  • 1/2 cup frozen orange juice concentrate
  • 2 cups sugar
  • 2 eggs, beaten
  • 4 cups flour
  • 4 tsp baking soda
  • sugar for rolling

Cream the butter, sugar, and orange juice concentrate. Let the mixture cool slightly. add the eggs, baking soda, salt, and orange zest, stirring after each addition. Add the flour in increments and mix thoroughly. Cover the bowl and refrigerate the dough at least 2 hours.

When you're ready to bake, preheat the oven to 350 degrees. Roll the chilled dough into walnut-sized balls and roll in sugar. Place them on a greased cookie sheet and press down just enough so they won't roll around on the sheet. Bake for 10-12 minutes.
