Spanish Rice

  • 1 3/4 cup chicken broth
  • 1 clove garlic, minced
  • 1 cup long grain rice
  • 1 tbsp oil
  • 1/2 cup onion, chopped
  • 1/2 tsp salt
  • 1/4 cup tomato sauce
  • 1/4 tsp ground cumin
  • 2 tbsp chili powder

Stir together the oil and rice in a 2 quart dish and microwave on high for 2 minutes. Stir and cook 2 more minutes. Stir in onion and garlic and cook an additional 2 minutes. Stir in chili powder, cumin, salt, tomato sauce, and broth. Cover and cook on high 10 minutes. Stir and cook another 5 minutes. Let stand 5 minutes before serving.
