Enchiladas

  • 1 can jalapeno refried beans
  • 1 can tomato sauce
  • 1 lb cheddar cheese, grated
  • 1 lb hamburger
  • 1 pkg 8 inch tortillas
  • 1 pkg McCormick enchildada seasoning

Make enchildada sauce according to package using tomato sauce. Brown hamburger, drain, and rinse. Return to skillet and add refried beans. Add about 1/2 cup of the sauce to the meat to thin, then melt in 1/3 of the grated cheese. Place enough sauce in an 8 x 8 pan to cover the bottom. Roll meat mixture into tortillas and place closely together in pan. Pour remaining sauce over the top and sprinkle heavily with cheese. Cover with foil and bake at 350 for about 30 minutes or until cheese is hot and bubbly throughout. Don't be afraid to double the sauce if needed.
