Strawberries 'N Cream Bread

  • 1 3/4 cups flour
  • 1 tsp vanilla
  • 1/2 cup butter, softened
  • 1/2 cup sour cream
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 2 eggs
  • 3/4 cup fresh strawberries, chopped
  • 3/4 cup sugar
  • 3/4 cup walnuts, chopped

In a mixing bowl, cream butter and sugar until fluffy. Beat in eggs one at a time. Add sour cream and vanilla and mix well. Combine flour, baking powder, baking soda, salt, and cinnamon and stir into creamed mixture just until moistened. Fold in strawberries and 1/2 cup nuts. Pour into a greased 8 x 4 x 2 inch pan. Sprinkle with remaining nuts. Bake at 350 for 65-70 min or until a toothpick inserted near the center comes out clean. Cool for 10 min and remove from pan to a wire rack to cool completely.
