Coconut and Cherry Cookies

  • 1 1/4 flour
  • 1 cup powdered sugar
  • 1 egg
  • 1 tsp baking powder
  • 1/2 cup butter, softened
  • 1/2 cup maraschino cherries, finely chopped
  • 1/2 cup shredded coconut
  • 9 maraschino cherries, quartered

Preheat the oven to 400 F. Line three large cookie sheet with parchment paper. Beat the butter and powdered sugar with an electric mixer on medium-high speed until pale and creamy. Add the egg and beat until just combined. With mixer on low speed, add the flour, coconut, and finely chopped cherries, mixing to combine. Place 36 small spoonfuls of batter onto the prepared cookie sheets, spacing 1 inch apart. Top each one with a piece of cherry. Bake for 10-15 minutes, or until light golden brown. Let cool on the cookie sheets for a few minutes. Transfer to a rack and let cool completely.
