Carrot Cake

  • 1 3/4 cup brown sugar
  • 1 can crushed pineapple
  • 1 cup coconut
  • 1 cup oil
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 2 cups carrots, grated
  • 2 cups flour
  • 2 tsp vanilla
  • 3 eggs

Mix all ingredients together. Bake in a 9 x 13 pan at 350 for 50 minutes. Serve warm with cool whip or cool and frost with cream cheese frosting.
