Chicken Parmesan

  • 1 cup milk
  • 1 lb mozzarella
  • 1 pk spaghetti noodles
  • 1 tbsp Italian seasoning
  • 1 tbsp garlic salt
  • 2 cups bread crumbs
  • 2 eggs
  • 2 lbs boneless chicken breasts
  • Leftover spaghetti sauce
  • Parmesan cheese, optional

Heat sauce and cook noodles. Mix seasonings into bread crumbs and mix milk and eggs in a pie plate. Trim chicken and cut into manageable pieces. Wet chicken in milk-egg mixture and roll in seasoned bread crumbs to coat evenly. Pan fry chicken with oil in a skillet. Place a healthy layer of sauce in a 9 x 13 pan (glass is best). Drain noodles and place in pan on top of sauce. Pour remaining sauce on top of noodles. Place chicken in single layer on top of sauce so that it all fits. Sprinkle grated cheese over entire surface. Cover with foil and bake at 350 for 20-30 minutes or until cheese is bubbly. Top with parmesan cheese if desired.
