Mayonnaise Date Cake

  • 1 1/2 cup boiling water
  • 1 1/2 cup brown sugar
  • 1 1/2 cup dates
  • 1 1/2 cup mayonnaise
  • 1 1/2 tsp baking soda
  • 1 tsp vanilla
  • 3 cups flour
  • 3 tbsp cocoa

Mix dates, water, and baking soda and set aside. In another bowl mix mayo, sugar, and cocoa. Add flour and vanilla to date mixture. Blend mixtures together and pour into a grease 9x 13 pan. Bake at 350 for 35-40 minutes. When cool, frost with cream cheese frosting. This cake tastes best chilled and can be frozen if unfrosted.
