Swedish Meatballs

These were a tradition at our house on Christmas Eve. After Christmas Eve services we would come home to a supper of these, fresh shrimp, wild rice casserole and of course, jello! That's the Minnesota Lutheran Tradition.

  • Aunt Carrot (aka: Karen Mastel)

Ingredients

  • 1 lb ground round
  • ½ lb ground pork
  • ½ cup finely mined onion
  • ¾ cup fine bread crumbs
  • ½ tsp all spice
  • 1.5 tsp salt
  • 1 tsp pepper
  • 1 egg, slightly beaten
  • ¼ cup oil
  • ¼ cup flour
  • 1 tsp paprika
  • ¾ cup sour cream
  • 2 cup boiling water

Directions

  1. Mix first nine ingredients together and shape into walnut-sized balls.
  2. Brown the meatballs in the oil. Remove and set aside, but keep warm.
  3. When all meatballs are cooked, blend together flour, paprika, sour cream and boiling water. Put the meatballs back into the sauce and simmer until done.
  4. Can be eaten alone as an appetizer or poured over rice or mashed potatoes.
