Swedish Meatballs
Notes
These were a tradition at our house on Christmas Eve. After Christmas Eve services we would come home to a supper of these, fresh shrimp, wild rice casserole and of course, jello! That's the Minnesota Lutheran Tradition.
- Aunt Carrot (aka: Karen Mastel)
Ingredients
- 1 lb ground round
- ½ lb ground pork
- ½ cup finely mined onion
- ¾ cup fine bread crumbs
- ½ tsp all spice
- 1.5 tsp salt
- 1 tsp pepper
- 1 egg, slightly beaten
- ¼ cup oil
- ¼ cup flour
- 1 tsp paprika
- ¾ cup sour cream
- 2 cup boiling water
Directions
- Mix first nine ingredients together and shape into walnut-sized balls.
- Brown the meatballs in the oil. Remove and set aside, but keep warm.
- When all meatballs are cooked, blend together flour, paprika, sour cream and boiling water. Put the meatballs back into the sauce and simmer until done.
- Can be eaten alone as an appetizer or poured over rice or mashed potatoes.
