Strawberry-Amaretto Bellini

  • 2 cups sugar
  • 2 cups water
  • ½ lb strawberries, sliced
  • 1 bottle sparkling wine or champagne
  • ¼ cup amaretto


  1. Combine sugar, water and strawberries in a saucepan; bring to a boil, reduce heat, and simmer 5 minutes. Remove from heat and let cool 15 minutes.
  2. Strain mixture, discarding solids. Cover remaining syrup and refrigerate up to 2 weeks.
  3. Pour about 2 Tbsp strawberry syrup into each serving glass, top with champagne and 1 tsp of amaretto.
