Uncle Kay's Salsa

Notes
Need about 1 dozen sterilized pint jars and lids.
Ingredients
- 1 ½ tbsp sugar
- 1 can black beans, rinsed and drained
- 1 tbsp pepper
- ½ cup vinegar
- ½ tbsp cilantro, chopped
- ½ tbsp parsley, chopped
- ½ tsp dried oregano
- ¼ cup olive oil
- 14 oz tomato paste
- 2 green bell peppers, chopped
- 2 red bell peppers, chopped
- 2 tbsp lime juice
- 2 tbsp salt
- 2 tsp red pepper flakes
- 2 yellow bell peppers, chopped
- 3 medium onions, chopped
- 5-6 lbs tomatoes, skinned and chopped
- 6 cloves garlic, minced
Directions
Mix all ingredients in a large pot and boil 15 minutes. Transfer to sterilized pint jars while the jars are still hot, leaving 1 inch of head room. Close jars and place in hot water bath for 15 minutes.
