Chocolate Cookies


  • 1 tsp almond extract
  • ½ cup sugar
  • ¼ cup unsalted butter
  • ¼ whipping cream
  • 2 ½ cups flour
  • 2 sticks unsalted butter
  • 4 oz chocolate
  • 4 tbsp cocoa
  • 5-7 oz almond paste
  • almond slivers (optional)
  • pinch of salt


Mix flour, 2 sticks butter, salt, sugar, cocoa, and almond extract into a dough. Let it rest about 1 hour. Roll out ⅛" thick and cut cookies. Bake them at 350 until done.

To make the filling, put the whipping cream and almond paste in a small pan and heat slowly, stirring constantly. Add 2 oz chocolate and mix to a creamy consistency. If it is too thick, add a little piece of butter. Cool. Attach two cookies with filling.

Melted the remaining chocolate and butter together. Spread it on top of the cookies and garnish with almond slivers if desired.
