Mocha Cookies





Mix first seven ingredients into a dough. Let it rest for 1 hour. Roll out the dough on a floured surface until ⅛" thick. Cut out cookies. Bake at 350 until done.

Mix the strong coffee with the instant flour, bring it to a boil, and cool. Cream together 1 stick of butter with ¾ cup sugar. Mix in cooled coffee mixture. Spread the filling between two cookies while slightly warm.

To make the glaze, mix the last three ingredients together until thoroughly blended. Glaze the cookies and garnish with a chocolate covered coffee bean if desired.
