- 1 cup cranberries or raisins
- 1 tsp ground fennel seeds
- ½ cup chopped almonds, walnuts, or hazelnuts
- ½ cup dried apricots, chopped
- 2 ½ cup sugar
- 3 eggs
- 4 tbsp butter, softened
- zest of 1 lemon
Mix all ingredients and make a dough. Divide into four pieces. Roll each piece into a log 1" thick. Put on a greased cookie sheet.
Bake slowly at 275 until slightly pink. (A high temperature will make it crack on top.) Cut into ½" circles.
