- 2 ¾ cup flour
- 2 egg yolks
- 3 sticks of unsalted butter, cold and grated
- ¾ cup sugar
- jam for filling
- pinch of salt
- zest of 1 lemon
Grate butter into flour, add sugar, salt, yolks, and lemon zest. For a smooth ball and let it rest for 1 hour. Roll out dough on a floured surface to ⅛" thickness and cut out cookies with a small round cookie cutter. Into half of the cut cookies, cut a window using a smaller round cookie cutter.
Bake at 350 until slightly pink. Let cool. Use jam to make cookie sandwiches, use one whole cookie on the bottom and one windowed one on the top.
