Blueberry Shortbread Bar Cookies
- 1 ½ cup butter, softened
- 1 can blueberry pie filling
- 3 cups flour
- ¾ cup powdered sugar
Preheat oven to 350 degrees. Cream butter with powdered sugar and add flour. Mix well. Spread half of this mixture (approx 2 ½ cups) into a greased 9 x 13 pan. Bake for 15 minutes. Let the crust cool for 5 minutes.Spread the pie filling over the top of the crust. Sprinkle it with the other half of the crust mixture and gently press it down with a spatula. Bake the cookie bars for another 30-35 minutes or until the top is lightly golden. Cool thoroughly before cutting into bars and dusting with a light extra powdered sugar.
