Heavenly Tea Cookies


Yields: 6-7 dozen


  • 1 ½ cup butter, melted
  • 1 ½ cup dried mixed fruit, chopped
  • 1 tsp vanilla
  • 2 cups bown sugar
  • 2 eggs, beaten
  • 2 tbsp flour to coat fruit
  • 2 tsp baking powder
  • 3 cups flour


Cream butter and brown sugar. Let cool before adding the eggs, baking powder, and vanilla. Chop fruit, measuring after chopping, and coat with flour. Add fruit to the other ingredients and stir. add the flour one cup at a time. Chill the dough for 20 minutes. Quarter the dough and roll into logs 2 inches in diameter. Chill logs tightly wrapped for at least 4 hours.Preheat oven to 375 degrees. Cut ¼ inch slices from the logs, making sure the logs are still round before cutting. Bake for 10 minutes or until nicely browned.
