Preheat oven to 375 degrees. Cream together butter and sugars. Add baking soda, salt, baking powder, vanilla, cinnamon, and eggs. Mix well. Then add the oats, chopped apple and 1 ½ cup coconut. Add the flour and mix thoroughly. Spoon into a greased 9x13 pan. Sprinkle the remaining ½ cup coconut evenly over the top. Bake for 25-30 minutes, or until slightly browned on top. Let cool and cut into bars.
