Pineapple Right-Side-Up Cookie Bars


Yields: 16 bars


  • 1 cup butter, softened
  • 1 tsp baking powder
  • ½ cup crushed pineapple, drained
  • ½ cup frozen concentrated pineapple juice
  • ½ cup sugar
  • ½ cup sugar again
  • ½ tsp salt
  • 2 cups ¼ cup flour
  • 4 eggs, beaten


Preheat oven to 350 degrees. Cream butter with ½ cup sugar and add 2 cups flour. Mix well. Spread mixture out in a greased 9x13 pan and press down evenly. Bake for 15-20 minutes.

Mix eggs with ½ cup sugar. Add pineapple concentrate, drained pineapple, and mix. Ad salt and baking powder and stir it all up. The add ¼ flour and mix thoroughly. Mixture will be runny but will set in the over. Pour mixture over the baked crust and bake for 45-50 minutes. Let cool thoroughly, then sprinkle a little powdered sugar on top and cut into brownie-sized bars. Served best a la mode.
