Chocolate Highlander Cookie Bars


  • 1 cup butter, melted and cooled to room temp
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ cup powdered sugar
  • ½ tsp salt
  • 2 ½ cups chocolate chips
  • 2 ½ cups flour
  • 4 eggs, beaten
  • powdered sugar for sprinkling over the top


Preheat oven to 350 degrees.

Shortbread crust: Cream softened butter with ½ cup powdered sugar and ¼ tsp salt. Add 2 cups flour and mix well. Pat it out in a greased 9x13 pan with your fingers. Bake at 350 degrees for 15 minutes.

Filling: Mix eggs with melted butter and sugar. Add baking powder, salt, and flour, and mix well. Melt the chocolate chips and add them to the mixture. Pour this mixture on top of the pan you just baked and tip the pan so it covers all of the shortbread crust. Stick it back into the oven and bake it for another 25 minutes. Then remove it from the oven and sprinkle on additional powdered sugar. Cut into squares before refrigerating.
