Southwestern Home Fries
Ingredients
- 1 jalapeno chile, finely diced
- 1 small spanish onion (finely chopped)
- 1 tbsp thinly sliced green onion, both white and green parts
- ½ lb bacon, sliced (optional)
- 2 ½ Idaho potatoes, scrubbed and cut into 1 ½ inch dice
- 2 cloves garlic, finely chopped
- 2 tbsp ancho chile powder
- 2 tbsp finely chopped fresh cilantro
- 8 tbsp (1 stick) butter
- Freshly ground pepper
- Kosher Salt
Directions
Put the potatoes in a large saucepan, add enough cold water to cover, and add 1 tablespoon salt.Bring to a boil over high heat and cook until the potatoes are tender when pierced with a knife (20-25min). Drain well.Heath the butter over medium heat in a large saute pan. Add the onion and jalapeno and cook until soft (3-4min).Add the garlic and cook for 30 seconds.Stir in ancho powder and stir until combined.Add the potatoes, season with salt and pepper and cook until golden brown on the bottom (4-6min).Turn over and cook until the bottom is golden brown (4-6min).Stir in the cilantro, green onion and cooked bacon (if using) and transfer to a bowl.
