Dipped Chocolate Orange Cookies

Ingredients

  • 1 cup flour
  • 1 egg yolk, lightly beaten
  • 1 tbsp orange zest, finely grated
  • ⅓ cup almonds, finely ground
  • ⅓ cup butter
  • ¼ cup sugar
  • ⅛ tsp salt
  • 2 tbsp orange juice
  • 4 oz semisweet chocolate, coarsely chopped

Directions

Mix the flour and salt in a large bowl. Cut in the butter until the mixture resemble fine crumbs. Mix in the almonds, sugar, and orange zest. Add the egg yolk and orange juice and stir until smooth. Press the dough into a ball and wrap in plastic wrap. Chill in the refrigerator for 30 minutes. Preheat the oven to 350 F. Butter two baking sheets. Roll out the dough to ¼ inch thick. Use a 2 inch cookie cutter to cut out the cookies. Re-roll the dough scraps and continue cutting out cookies until all the dough is used. Transfer the cookies to the prepared baking sheets, placing them 1 inch apart. Bake until golden, 10-15 minutes. cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely. Melt the chocolate in a double boiler over barely simmering water. Dip the cookies halfway into the chocolate and let stand for 30 minutes until set.
