Peanut Brittle


  • 1 cup light corn syrup
  • 1 tsp baking soda
  • ½ cup boiling water
  • 2 cups sugar
  • 2-4 cups raw peanuts


Cook syrup, sugar, and water until the soft ball stage (236 degrees). Add peanuts, cook until mixture is amber in color (294 degrees). Remove from heat and add baking soda. Stir thoroughly and pour onto a greased cookie sheet. When cool, break into pieces. NOTE: Peanut Brittle does not seem to set up if the air is humid, best not to make on rainy days.
