Beef Tenderloin with Chocolate
Ingredients
- 1 clove garlic, finely chopped
- 1 cup water
- 1 oz bittersweet chocolate, finely grated
- 1 small onion, finely chopped
- ½ cup dry white wine
- 2 lb beef tenderloin, in a single cut
- 2 tbsp parsley, finely chopped
- 3 tbsp butter
- salt and freshly ground black pepper
Directions
Season the beef generously with salt and pepper. Brown the beef int he butter in a large frying pan over high heat until sealed all over, 8-10 minutes. Add the onion and garlic and saute over medium heat until the onion has softened, about 5 minutes. Pour in the water and wine. Cover and simmer over low heat for 15 minutes. Add the chocolate and simmer until tender, 15-30 minutes more. Slice the beef finely and sprinkle with the parsley.
