El Rancho Casserole


  • 1 can mexican diced tomatoes, drained
  • 1 can of corn, drained
  • 1 lb hamburger
  • 1 medium onion, chopped
  • ½ lb cheddar cheese, shredded
  • 3 tbsp taco seasoning
  • 4 cloves garlic, minced
  • 8 oz macaroni noodles, cooked
  • 9 oz bag fritos


Brown hamburger with onion and garlic. Add remaining ingredients (except cheese and noodles) and cook until heated through and flavors blend. Add half of cheese and stir until thoroughly melted. Stir in noodles. If desired, add more seasoning to taste. Transfer to a 9x13 and top with remaining cheese and half of the fritos (save the rest for topping leftovers!). Broil on low until cheese is melted.
