Lemon Cheesecake Squares


  • 1 ¼ cups graham cracker crumbs
  • 1 egg, lightly beaten
  • 1 pkg cream cheese, softened
  • ½ cup sugar
  • ⅓ cup butter, melted
  • 3 tbsp cornstarch
  • 5 tbsp lemon curd


Preheat the oven to 375 F. Butter a 9 inch square baking pan. Base: Mix the graham cracker crumbs and butter in a large bowl until well blended. Firmly press the mixture into the prepared pan to form a smooth, even layer.Topping: Beat the cream cheese and sugar in a large bowl with an electric mixer at low speed until smooth. Beat in the lemon curd,cornstarch, and egg. Spoon the topping over the cookie base.Bake for 25-30 minutes, or until firm to the touch. Cool completely before cutting into bars.
