Mocha Nut Cookies

Erika made this cookie recipe herself as a challenge in her summer bucket list for 2023.

Ingredients

• 2 cups brown sugar
• 1 cup butter, softened
• 2 eggs
• 2 tsp vanilla
• 2 tsp baking soda
• 2 tsp cinnamon
• ¾ cup cocoa
• 2 tsp espresso, instant
• 3 ½ cup flour
• 1 cup hazelnuts, roasted and chopped

Directions

Cream the brown sugar and butter. Beat in the eggs, the add vanilla, baking soda, cinnamon, cocoa and instant espresso. Mix in the flour, then hazelnuts. Bake at 375 for 9 minutes
